Stay out in the country
To really enjoy rural Spain stay in a village and embrace the small town atmosphere.
Two places that I strongly recommend in the vicinity of Cuenca that will allow you to visit Cuenca, as well as the beautiful nearby countryside, are as follows:
Rent a house with a group of friends in Ribagorda
If you want to go with a group of friends, this is the perfect spot. The owner rents out two houses, so you have your pick of either one—or both if you have a lot of friends. One of them has 6 bedrooms, each with its own personal ensuite. The house is spacious with a large living room and kitchen area. We were a huge group and it didn’t feel cramped as there are a number of common spaces. There is also a swimming pool (you have to go to a building outside of the house).
The 2nd house has a layout that I prefer. It has the main living area all on one level and not so many stairs. The downside to the 2nd house is that there isn’t a bathroom with every bedroom so you have to share. It has five bedrooms, but only 3 bathrooms.
Both houses have fireplaces in the living rooms which you will appreciate if you go in the cooler months. The owner provides the wood. And both houses have a BBQ area for the use of the guests.
Star gazing in Ribagorda
This town is quiet and all about getting away from it all. The town appreciates and promotes its natural spaces. It has built a look-out area on the highest hill in which to overlook and appreciate an amazing vista of all the neighbouring fields and towns. Some of our group hiked up to the at midnight to appreciate the stars. My daughter said that "the stars looked like frozen raindrops shining in the air, delicate and perfect." She said she thought she could reach out and touch the lights of the towns down below as they seemed so close. This is an authentic light pollution-free town that is perfect for star gazing.

Cottages in the village of Majadas:
The cottages of La Utrera are set up as a small village in Spain from centuries ago. All of the cottages are in a semi-circle which opens into a large garden common area.
Everything is well kept up and clean. In the spring and summer flowers are blooming throughout the garden area.
Here you can rent an individual cottage that sleeps up to 5 people. The cottages are rustic, clean and perfect for a few days in the country. There is also a restaurant with a charming outdoor patio, a bull ring to let you know you are really in Spain, a summer kitchen where guests can take advantage of a wood BBQ and fireplace for roasting lamb or making a paella. (the cabins have a two burner stove if you would prefer- but the guest cookhouse just begs use)
